Easy Easter Dessert:: Chocolate Egg Cream

This is a fun twist on a dessert: the chocolate egg cream (which ironically has no eggs in it!). If you’re in the South like we are, there’s a better than average chance your Easter might be a bit on the warm side. Cool off with this fun chocolate egg cream.

I love the idea of preparing each one ahead of time in their own glass milk bottles. Not only does it make serving a breeze, but it’s also a cute presentation. Add a fun straw for a little extra pizzazz. If you have the time, add flags that match your theme. In this case, we shot the recipe for a baby shower, but you could easily change the flags to feature each guest’s name instead.

Kids are bound to love this dessert, too. And with only a few ingredients, it’s the best sort of recipe for a crowd.

Chocolate Egg Cream
Makes 1 serving
You will need:

– 1/2 cup chilled milk *(almond milk is an option)
– 3 tablespoons dark chocolate syrup (Hershey’s syrup is great)
– 1/2 cup club soda

To prepare:

Mix the milk and syrup then top off with the club soda.

Make Ahead Holiday Dessert:: Salted Chocolate Pots de Crème

One thing that’s super important when it comes to hosting is to be a stress-free hostess. A key to remaining calm and collected is to make a few dishes ahead of time. Pots de Crème are a lovely way to end a meal, and they happen to be a great make ahead dessert choice. In fact, these can be made up to two days in advance! It’s an elegant, indulgent dessert that’s sure to wow your guests. Let me know if you give them a try; I’m confident you’ll love it if you do!

Salted Chocolate Pots de Crème
Serves 6-8

You will need:
1 ½ cup whole milk
– 1/2 cup whipping cream
– 5 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
– 1 teaspoon sea salt, or flake salt
– 6 large egg yolks
– 1/3 cup sugar
– 1 cup whipped cream for topping

To prepare:

Preheat oven to 325°F. Bring milk and cream just to simmer in heavy medium saucepan over medium heat. Remove from heat. Add chocolate and salt; whisk until melted and smooth. Whisk yolks and sugar in large bowl to blend. Gradually whisk in hot chocolate mixture. Strain mixture into another bowl. Cool 10 minutes, skimming any foam from surface.

Divide custard mixture among six 3/4-cup custard cups or soufflé dishes. Cover each with foil. Place cups in large baking pan. Add enough hot water to pan to come halfway up sides of cups. Bake until custards are set but centers still move slightly when gently shaken, about 55 minutes. Remove from water. Remove foil. Chill custards until cold, about 3 hours. (Can be made 2 days ahead. Cover and keep chilled.) Top with whip cream, and serve.

Summer Recipe:: Fire and Ice S’mores

While summer doesn’t technically start for a few more weeks, I always think of Memorial Day as the unofficial launch of the summer season. Is there anything more quintessentially summer than s’mores? S’mores are one of those gooey foods that are as fun as they are messy. Seriously. Have you ever NOT had fun making s’mores? I didn’t think so.

These fire and ice s’mores are a twist on the traditional. I’m adding homemade vanilla ice cream to mix things up. Of course, you can stick with the original ingredients, or you can give this one a try. No matter what, make s’mores a part of your Memorial Day Weekend gatherings.

Fire and Ice S’mores

You will need:

– Marshmallows
– Quality chocolate (try dark chocolate for extra indulgence)
– Healthy graham crackers – available at specialty markets like Whole Foods
– Sea Salt
– Olive Oil
– Vanilla Ice Cream (recipe below!)

Vanilla Bean Ice Cream
You will need:
– 2 cups heavy cream
– 1 cup whole milk
– 3/4 cup sugar
– 1/8 teaspoon salt
– 3 vanilla beans – split lengthwise
– 2 large eggs
To prepare ice cream:

Combine cream, milk, sugar, and salt in a heavy saucepan. With the tip of a knife, scrape seeds from vanilla beans into cream mixture, then drop in pods. Heat cream mixture just to a boil. Whisk eggs in a large bowl, then add hot cream mixture in a slow stream, while whisking. Pour mixture into saucepan and cook over moderately low heat, stirring constantly, until slightly thickened and registers 170°F on thermometer (do not let boil). Pour custard through a fine-mesh sieve into a clean metal bowl, then cool, stirring occasionally. Chill, covered, until cold, at least 3 hours. Freeze custard in an ice cream maker. Transfer to an airtight container and put in freezer.

To Prepare S’mores:

Have guests assemble their S’mores outside by the fire.

In the meantime prepare individual bowls or glasses with a scoop of vanilla ice cream drizzled with a teaspoon on Olive Oil and sprinkled with sea salt.

Have guests grab a bowl and dip their s’more into the ice cream.

*Cooks’ notes: ·To cool custard quickly after straining, set bowl in a larger bowl of ice and cold water and stir until chilled. ·Custard can be chilled up to 24 hours.

How to Elevate Boxed Cake Mix, Just in Time for Valentine’s Day

Hi Everyone! It’s Nicole, Annette’s friend and web-manager, and I’m back with a fun, festive post for Valentine’s Day. Let’s start at the beginning: I am a pretty good cook! I enjoy putting my own twists on recipes, and my specialties are sauces and condiments. I make a mean aioli.

That said, I am absolutely not a baker. It’s just not my forte. I enjoy adding a dash of this or a pinch of that here and there, so the precision of baking just isn’t my thing. But, since I love chocolate, cookies, and creme brûlée just as much as the next gal, I’m always looking for ways to incorporate baking…kind of. My current favorite trick: elevating boxed cake mix.

While you can elevate boxed cake mix many different ways, there are two no-fail ways to take boxed mix from drab to fab. First, bake it in a fun dish.

This serves two purposes: one, it instantly makes the cake look like you spent more time on it. Two, you can serve your cake directly from the dish. Presentation is huge!

I picked up these ceramic bakers from HomeGoods for a steal. One thing to remember: if you are baking in ceramic, you have to watch the cooking time. I added 5 minutes to the cooking time of the Godiva boxed mix I picked up, but I kept a keen eye on the cake the entire time it was baking.

Another way to elevate boxed cake mix? Make your own fabulous icing. Icing is so easy. Truly. It requires just a few ingredients (namely butter and sugar). I used a recipe found on Jenny Steffens’ blog for a chocolate glaze. It tastes almost exactly like your grandmother’s Texas sheet cake icing and by the end of the afternoon, I was eating it with a spoon. Whoops! Note: I used 2 cups of powdered sugar when I made mine.

For even more festive fun, you can add a creative design using sprinkles or chocolate pearls – which will only make it look even LESS like boxed cake (win!).

Raw Food Homemade Energy Bites

I don’t know about you, but store bought energy bars sort of gross me out. When I need a little something sweet and satisfying these will do the trick. I have amended a recipe from one green planet.

These bars are super good; let me know what you think. I usually store a bunch in the freezer and take them along to snack on during the day.

*Note these are more delicate than store bought energy bars, so place them in a glass sealed container rather than a plastic bag, they will hold and travel better.

Raw Super Food Energy Bars with Dark Chocolate
(note: I have amended the original recipe)
makes 20- 2 inch diameter bites

You will need:

– 1 cup walnuts
– 1/3 cup chia seeds ( *optional they are really rough on the teeth)
– 1/3 cup ground flax seeds
– 3 tablespoons hemp seeds
– 1/4 cup cacao nibs or dark chocolate chips
– 1/4 cup coconut flakes
– 3/4 cup pumpkin seeds
– 1 cup raisins
– 2 cup dates ( remove the pit)
– 1-2 tablespoons melted coconut oil, as needed
– 1 cup semi sweet chocolate chips melted

To prepare:

  1. Throw the dry ingredients in your food processor, then add the dates and raisins and process until everything it starts to stick together for at least 5 minutes it needs to resemble a paste. If it’s too dry, add more dates or coconut oil.
  2.  Mix in with your hands, forming rounds balls (note you really need to press together the mix) take the balls and press into a small muffin tin.
  3. Melt chocolate chips in the microwave for 1 minute, whisk to smooth
  4.  Carefully remove the energy bar cups from the tin and top off with melted chocolate  let them cool in the refrigerator for 15 minutes.
