cranberry apple sauce- for Thanksgivukkah

_FRJ5016 With the holidays around the corner, I will be sharing some recipes and thoughts, especially about the one and only “Thanksgivukkah.” As you can imagine I have been going into a creative frenzy trying to come up with some inventive ways to ring in this unusual holiday. Hanukkah is the festival of lights, Thanksgiving is the day to give thanks, each holiday has family and traditional food in common so this should be easy right? Right!

Here’s what I have on my menu for this year… I intend to make my world famous sweet potato latke recipe (you may remember this recipe from a past blog post). I thought this year it would be cool to serve it with cranberry applesauce (recipe below). Of course, serving turkey is a given (I have the most amazing turkey recipe in my cookbook: Picture Perfect Parties). _FRJ5023 _FRJ5025

Cranberry Applesauce

You will need:

  • 8 cups of cranberries
  • 8 small or 6 medium apples sliced
  • 1/2 cup sugar

  • In a large sauce pan place cranberries, sliced apple, and sugar. _FRJ5032 Simmer on low heat, stirring regularly to prevent sticking, for 45 minutes until completely cooked and softened. Press the cooked cranberries and cooked apples with a fork to completely combine. The fruit should have a smooth yet chunky consistency. _FRJ5054 Let the applesauce cool. Stored in a closed jar, it can be kept in the refrigerator for up to 2 weeks. Wouldn’t this make a lovely hostess gift? Tie some ribbon on the jar and you’re all set. _FRJ5079
