Cocktail:: Watermelon Salty Dog

My Dad used to eat chilled watermelon wedges with salt in the summertime, and this watermelon salty dog cocktail reminds me of that childhood memory. It’s absolutely refreshing and delicious!  I like the little melons for this recipe (pass chunks of watermelon through a fine sieve for fresh juice). Don’t forget to salt the rim! That’s the trick. Try it and let me know how you like it.

Watermelon Salty Dog
Serves 1

You will need:

– 1 cup fresh watermelon juice.
– 2 oz tequila
– Juice of 1 lime
– Sea salt for the rim

To prepare:

In a shaker, place ice, watermelon juice, tequila and lime juice. Shake until fully combined and chilled, about 1 minute.

Strain into a glass, rim the glass with lime half, and sprinkle the rim with sea salt. It’s okay if some of the salt falls into the glass.

Watermelon Feta Salad

Did you know Georgia is among the top four states for watermelon production in the U.S.? Texas, Georgia, Florida, and California produce nearly 70% of our watermelon crop each year. Watermelon season is right now, and local watermelon is likely plentiful at your local markets.

It also happens to be the perfect summer treat for a variety of recipes because it is naturally hydrating. After all, there’s a reason it’s called watermelon. The fruit is made up of 92% water. Perfect for scorching summer days!

Sweet watermelon pairs beautifully with tangy cheeses such as feta. This watermelon feta salad is a winner and a crowd-pleaser. Try it this weekend paired with grilled chicken or fish. It will be a light yet satisfying summer meal.

Watermelon Feta Salad
Serves 6
You will need:

– 4 cups cold cubed watermelon
– 1/2 cup fresh basil leaves cut in chiffonade
– 1/2 cup of crumbled feta cheese
– 4 tablespoons Saba
– 2 tablespoons of olive oil
– 1/2 teaspoon salt

To prepare:

Arrange the cubed cold watermelon in a shallow platter. Sprinkle with basil, feta, saba, salt and olive oil. Serve immediately.

I prepare this salad right before we sit down to eat, so it stays cold, crisp, and fresh. If prepared in advance, be sure to keep it chilled until ready to serve.

Watermelon Spritzer:: THE drink of the season

Watermelon is ripe and ready this time of year which means it’s time for Keith Robinson’s delicious batched cocktail recipe, the watermelon spritzer. It’s perfect for spring and summer. Try it this weekend, and let me know what you think. Remember: you can always cut it down for a smaller, more COVID-19 appropriate group. Or just make the entire batch for a weekend of refreshments.

Watermelon Spritzer
Serves 12

You will need:
– 6 cups watermelon juice
– 1 cups fresh lime juice
– 1 cups mint simple syrup
– 1 bottle white Bordeaux or white burgundy wine
– 1/2 bottle club soda
– Fresh mint, lime slices as garnish

To prepare:
In a pitcher combine all the ingredients and ice and stir. To serve add fresh mint and slice of lime as garnish to each glass.

The Perfect Cookout Recipe:: Watermelon Salad

Labor Day is just around the corner which means cookouts abound. This watermelon salad is the perfect last minute recipe for cookouts. I have been craving watermelon lately, in fact I have been using it with all sorts of salads and appetizers. I’ve found that it works beautifully with salt and Saba.

I use watermelon as I would tomatoes, and surprisingly, it’s a perfect substitute. Give it a whirl. This is the perfect summer salad to serve with grilled meat or to take along to a cookout.

Watermelon Salad with Feta with Saba
Serves 6
You will need:

– 4 cups cold cubed watermelon
